1) Turn on the barbecue.
2) Sprinkle some salt on the eggplant slices and coat them in olive oil.
3) Grill the eggplant and bell pepper on the barbecue.
4) In a bowl, combine 2 tablespoons of olive oil with the balsamic vinegar, garlic, thyme, salt and pepper.
5) Add the hot grilled vegetables and stir. Remove the garlic just before serving.
6) Grill the burgers on the barbecue for 4-5 minutes.
7) Serve the burgers with the baguette, hummus and grilled vegetables.
