150 gr penne pasta
8 cherry tomatoes
1 can diced tomatoes (400 g)
1 tbsp tomato puree
1 large shallot
1 clove garlic
1 red chili pepper
2 tsp dried oregano
2 tbsp olive oil

Crunchy Tofu Pasta with a Spicy Tomato Twist

Pasta tossed in a spicy tomato sauce, topped with golden crunchy tofu. A bold, comforting dish with a kick that brings plant‑based pasta to the next level.

Preparation

1. Build the Spicy Tomato Sauce

Finely chop the shallot, garlic, and red chili pepper (without seeds) and fry in oil in a frying pan until translucent. Add the oregano and tomato paste and fry briefly. Add the diced tomatoes and simmer the sauce for about 15 minutes.

2. Fry the tomatoes

Fry the tomatoes in a frying pan until they soften.

3. Cook the pasta

Cook the penne according to the instructions on the packet until al dente, drain and reserve some of the cooking liquid.

4. Fry the Crunchy Tofu golden

Fry the crunchy tofu in the air fryer according to the instructions on the packet until crispy and golden brown. Mix the pasta with the tomato sauce and add some of the cooking liquid if necessary.

5. Plate and finish

Divide the penne between plates and top with the crunchy tofu. Garnish with some oregano, black pepper, and grated (vegan) cheese.
