1 cucumber
4 radishes
1/2 yellow bell pepper
1 carrot
1/4 red onion
40 ml orange juice
15 ml lemon juice
1 tsp mustard
1 tsp honey
1 tbsp olive oil

Crunchy Tofu spring salad

A light and crisp spring salad that’s perfect for lunch or a simple dinner. Fresh greens, crunchy veggies and a zesty citrus dressing pair beautifully with Garden Gourmet Crunchy Tofu for a bright, satisfying bite.

Preparation

1. Prepare salad ingredients

Place the baby spinach leaves and the inner light leaves of the lettuce in a large bowl. Cut approx. 1/4 of the cucumber and carrot into ribbons using a vegetable peeler, slice the radishes and chop the bell pepper. Mix the vegetables into the lettuce.

2. Prepare dressing

Finely chop the onion. Mix the orange and lemon juice, oil, mustard, honey and onion to make a dressing. Season to taste with salt and pepper.

3. Cook the Crunchy Tofu

Cook the Crunchy Tofu in the air fryer, oven or pan according to the instructions on the package until crispy and golden brown.

4. Plate the dish

Gently mix some dressing into the salad and divide between plates. Sprinkle the crispy tofu cubes on top and scatter the sunflower seeds over the salad.
* Add herbs such as dill, mint, or parsley as an extra ingredient, or thinly sliced spring onion.
